QUALITY INDICATORS IN THE APPLICATION OF MEAT GROWTH STIMULANTS

Abstract (English):
Cel' issledovaniy – povyshenie myasnoy produktivnosti i kachestva govyadiny ot bychkov cherno-pestroy porody s primeneniem preparata Nukleopeptid v vide in'ekcii. Issledovaniya provedeny v SPK-kolhoze «Geroy» Chekmagushevskogo rayona Respubliki Bashkortostan. Dlya provedeniya nauchno-hozyaystvennogo opyta bylo sformi-rovano 4 gruppy bychkov cherno-pestroy porody v vozraste 6 mes., po 10 golov v kazhdoy. Gruppy formirovalis' po principu grupp-analogov. Zhivotnym II gruppy vvodili preparat Nukleopeptid podkozhno v doze 20 ml, III gruppe – 25 ml i IV gruppe – 30 ml. Bychki I gruppy yavlyalis' kontrolem i im preparat ne vvodilsya. Issledovaniyami ustanov-leno, chto u bychkov imeyutsya opredelennye mezhgruppovye razlichiya po soderzhaniyu suhogo veschestva (zhira i belka) v dlinneyshey myshce spiny. Pri etom bychki I (kontrol'noy) gruppy po soderzhaniyu belka v dlinneyshey myshce spiny ustupali sverstnikam II gruppy na 0,40%, III gruppy – na 0,80%, IV gruppy – na 0,50%. Izucheno vliyanie natural'nogo biostimulyatora Nukleopeptid na tehnologicheskie pokazateli myasa ot bychkov cherno-pestroy porody. Analiz po-luchennyh dannyh svidetel'stvuet o lidiruyuschem polozhenii zhivotnyh opytnyh grupp nad bychkami kontrol'noy gruppy kak po energeticheskoy cennosti 1 kg myshechnoy tkani, tak i po energii, zaklyuchennoy vo vseh myshcah tushi. Tak zhivotnye I gruppy ustupali sverstnikam II gruppy po velichine pervogo pokazatelya na 71,0 kDzh (1,58%), vtorogo – na 49,7 MDzh (6,20%), III gruppy sootvetstvenno na 332,0 kDzh (7,38%) i 179,4 MDzh (22,36%), a IV gruppy – na 236,0 kDzh (5,25%) i 122,8 MDzh (15,31%). Dokazano, chto stimulyator Nukleopeptid sposobstvuet polucheniyu govyadiny s bolee vysokimi kulinarnymi i tehnologicheskimi svoystvami.
